Three New UK Venues Redefine Hospitality with Heritage and Innovation

Two new hospitality venues have recently opened in the UK, each offering a distinct experience. In Oxford, the Mercure Oxford Hawkwell House Hotel has unveiled its vintage-inspired interiors, while in London, the Mondrian Shoreditch has made its debut as the brand’s European flagship. Both properties blend heritage with modern design, catering to different tastes.

Meanwhile, in Staffordshire, Willow—a botanical-themed restaurant—has launched within the scenic Trentham Gardens Estate, adding to the area’s dining appeal. The Mercure Oxford Hawkwell House Hotel sits on three acres of private gardens on the outskirts of Oxford. Its three buildings include two 19th-century manor houses, now refreshed with decor inspired by classic Oxford style. The interiors draw from the city’s sartorial heritage, featuring nods to the Oxford brogue and Oxford shirt.

In London, the Mondrian Shoreditch opened in June 2023 after a major redesign led by Goddard Littlefair. Owned by The Reuben Brothers, the hotel marks the brand’s return to the capital as Accor’s European flagship. Its overhaul was heavily influenced by the local Shoreditch area.

Over in Staffordshire, Willow—a new all-day dining venue—welcomed guests in May 2023. Part of the Parogon Group’s expanding portfolio, the restaurant is set within Trentham Gardens Estate, a popular spot for walking and leisure. Its botanical theme is brought to life with lush greenery, natural light, and soft evening lighting.

The Mondrian Shoreditch also introduces the UK’s first culinary concept by Chef Dani Garcia, making it the sixth hotel in the brand’s global collection. The Mercure Oxford Hawkwell House Hotel now offers a heritage-rich stay with a modern twist. The Mondrian Shoreditch strengthens Accor’s presence in London with a locally inspired design. Meanwhile, Willow provides a fresh dining option in Trentham Gardens, blending nature with hospitality. All three venues have opened within the past year, expanding choices for visitors and locals alike.
