Glimpse: Fontainebleau Las Vegas' Dining and Entertainment Choices

Three high-end dining establishments and nightclubs are set to open with the Fontainebleau in December 2023, as per Vital Vegas' blog.

This upcoming 67-story tower will be the first new casino resort on the Las Vegas strip since Resorts World's grand opening in June 2021. Komodo and Papi Steak, both successful brands in Miami Beach, will lead the restaurant offerings, with LIV headlining Fontainebleau's nightlife. David Grutman's Groot Hospitality will bring these brands to Vegas.

Komodo focuses on Southeast Asian cuisine, boasting two locations – one at the Fontainebleau Miami Beach hotel – while Papi Steak's website describes the establishment as embodying Hollywood's "Golden Era swagger" with "modern-day Miami energy."

Before opening in Vegas, LIV is expected to unveil two major DJ residencies. As per Vital Vegas, two renowned DJs from Resorts World's Zouk Group, Tiesto and Zedd, have reportedly been enticed to leave their previous post and join LIV. Additionally, a Mexican restaurant concept from celebrity chef Gabriela Cámara could potentially join this lineup, featuring in a 2019 Netflix documentary and named one of Time magazine's "Most Influential People" in 2020.

One Restaurant That Might Not Make It

The Las Vegas Review-Journal reports that Mother Wolf, a popular LA restaurant, is eyeing a spot at Fontainebleau, but a potential legal battle could disrupt these plans.

In mid-July 2022, Relevant Group filed a lawsuit against Ten Five Hospitality and Dan Daley in Nevada District Court, aiming to block Daley and his company from bringing the Italian eatery, opened by Chef Evan Funke in 2021, to the Fontainebleau.

The legal battle centers around Daley's alleged conspiracy to "steal corporate opportunities" via "sham" operating agreements made while he was still working for Relevant, as mentioned in court papers obtained by the R-J. In a separate lawsuit, Ten Five and Daley sued Relevant and its affiliates for breach of contract and defamation.

A Ten Five representative told the newspaper that the lawsuit wouldn't significantly disrupt Mother Wolf's planned opening.
