Vegas Restaurant Roundup: Killer Hibiscus, New Mexican, Salt and Straw
Fleur, the popular steakhouse brand opened by Chef Hubert Keller in Mandalay Bay 18 years ago, will close permanently on June 30. This winter, a new project will fill that space.
Keller is nationally known for his Fleur de Lys in San Francisco and opened a Michelin-starred restaurant in Las Vegas in 2005. In 2010, Keller changed its name to "Fleur by Hubert Keller" and the menu was changed to "Casual". In 2014, he closed the San Francisco restaurant. In 2021, Keller turned over control of the Las Vegas outpost to MGM Resorts, which operates the resort. The restaurant reopened during the pandemic, but without Keller’s name.
This is the second Mandalay Bay restaurant to close this year, following Charlie Palmer's Aureole, which was replaced in May by Retro by Votaggio (for at least a year).
