In Las Vegas, food halls have been taking over from buffets, and the Rio hotel announced recently that it would be unveiling its Canteen Food Hall in the space formerly occupied by Carnival.

Rio Casino to Launch Food Hall in Former Buffet Space, Gordon Ramsay Gets Ready for 7th Las Vegas Restaurant

With the Rio's announcement that their new Canteen Food Hall will open in the former Carnival World Buffet space in January, food halls are quickly replacing buffets all over Las Vegas. This comes after the Carnival World Buffet closed in March 2020 due to the pandemic and never reopened.

According to Trevor Scherrer, the Rio's president and CEO, they wanted to create a dining destination that appeals to a wide range of people, just like the Carnival World Buffet once did.

Here are the Canteen Food Hall's restaurant concepts:

  1. Southland Burrito Co.: A tribute to the flavors that marked his Mexican-American heritage, Chef Marco Herrara's restaurant offers burritos and quesadillas made with a fluffy, crepe-like regional type of flour tortilla.
  2. Shogun Ramen: Formed through a partnership between Chef Foo Kanegae and restaurateur Takashi Segawa, this Japanese restaurant serves dishes filled with umami, with countless ramen options.
  3. Tony Luke's: South Philadelphia's famous cheesesteak chain plans to introduce their specialty sandwiches to the West Coast for the first time. Their menu includes roast pork Italian, chicken cheesesteaks, and chicken cutlets.
  4. Tender Crush: Chris Barish and Julie Mulligan, the founders of Black Tap Craft Burgers & Beer, bring their fried and grilled chicken tenders to Las Vegas with their new concept, Tender Crush.
  5. Nama Nama: This street sushi spot, created by the team behind Cosmopolitan's Tekka Bar, aims to satisfy customers with made-to-order handrolls, cut rolls, and poke bowls.
  6. Attaboy Burger: With only three burger options, Chef Alex Resnick offers the single smash, the double smash, and a fried bologna sandwich at his new restaurant, Attaboy Burger.

Meanwhile, Gordon Ramsay is gearing up to open his seventh restaurant on the Strip at the Flamingo, which was accurately predicted by Scott Roeben of Vital Vegas blog back in September 2023. The restaurant's name is currently under wraps, but a recently submitted building permit refers to it as "Bird Bar." The question remains if the Flamingo's existing Bird Bar will have to make way for the new Ramsay restaurant.

Finally, Lisa Vanderpump has shared the name of her third Las Vegas restaurant. Pinky's by Vanderpump is set to debut this summer in the location previously occupied by the Purple Zebra bar.
