The Potato Flapjack, a unique and innovative baked good, has been making waves in the culinary world. This flourless and eggless treat is the brainchild of Viola Urban, and it's gaining popularity for its taste, nutritional value, and versatility.

The Potato Flapjack recipe is developed by the German Potato Marketing Association (KMG), and it avoids industrial sugar without compromising taste. Instead, it uses natural sweeteners like dried dates and agave syrup.

To create the Potato-Date Cream, 150g of dried dates are soaked and blended with 100ml of water, 2 tbsp of agave syrup, and a pinch of salt. For added nutritional benefits, 10g of sunflower seeds and 10g of flax seeds are mixed into this creamy base. Moreover, 100g of starchy potatoes are also used in the recipe.

75g of quinoa is another key ingredient that's mixed into the Potato-Date Cream, making the Potato Flapjack a fiber and energy source. Once the mixture is prepared, it's poured into a baking dish and baked in the oven for 45-50 minutes.

As the Potato Flapjack bakes, 30g of baking chocolate is sprinkled over the mixture and gently pressed in, adding a delightful chocolatey twist.

According to the KMG, the Potato Flapjack keeps you full for a long time, making it an ideal snack or dessert option. The British term "flapjack" refers to a simple, flat, oven-baked baked good. The word "flap" in "flapjack" means "fall flat" or "move," perhaps indicating the original recipe's simplicity and ease of preparation.
