In the culinary world, Liane Jonda has crafted a unique and delectable recipe that combines the richness of Gruyère sauce with a zesty lemon-flavoured goat cheese omelette. Here's a step-by-step guide to recreating this exquisite dish at home.

First, let's start with the omelette. Begin by whisking together creme fraiche, eggs, salt, and black pepper in a bowl. Then, cook the mixture in a nonstick skillet over medium heat, stirring continuously while scraping the perimeter. As the mixture begins to thicken and the bottom of the skillet starts to appear, set aside.

Next, it's time to prepare the goat cheese filling. Combine caramelized onions, goat cheese, heavy cream, herbs, lemon zest, salt, and black pepper in a bowl. Whip until the filling is smooth. Place this filling slightly below the midway point of the omelette during its preparation.

Now, fold the omelette towards the edge of the skillet opposite the handle and invert it onto a plate.

For the caramelized onions, cook onions, thyme, bay leaf, salt, and butter in a nonstick skillet over medium-low heat until tender, translucent, and deeply golden brown.

The star of the show, the Gruyère sauce, is made by heating cream in a small pot over medium-high heat until simmering. Then, stir in Gruyère cheese until it's melted and the sauce is smooth.

Pour the Gruyère sauce around the omelette, and use chives as a garnish. Serve the dish warm for an unforgettable dining experience.
