Margaritaville in Vegas Undergoing Garth Brooks-Inspired Transformation; Venetian to Host Michelin-Rated Korean Grill
COTE in Las Vegas, the first West Coast branch of Manhattan's COTE Korean Steakhouse, is set to open next year at the Waterfall Atrium in The Venetian. COTE is the only Michelin-starred Korean steakhouse in America.
Simon Kim, owner of COTE, shared his excitement saying, "I went to UNLV and my first significant job in the hospitality industry was in Las Vegas, so opening a COTE in this entertainment hub is far more than just another opening. It's a triumphant return home."
David Rockwell and his company, Rockwell Group, are responsible for the design of the eatery, which will feature a tiered dining area reminiscent of a theater, skybox private dining rooms, a central bar, immersive lighting, and a DJ booth.
In a statement, Kim emphasized, "Even though COTE Korean Steakhouse is a concept I developed in New York City, the vibrant energy, music, and entertainment of Las Vegas have always been part of our brand's identity. We're taking that up a notch with this opening."
COTE Las Vegas will also retain COTE's Michelin-starred wine list.
Dining Around Town
Margaritaville, the bar and restaurant operated by the late Jimmy Buffett at the Flamingo since 2011, has shut down and is expected to be replaced by a new establishment. Caesars Entertainment might be collaborating with country music star Garth Brooks for this venture.
Vital Vegas has reported this news since Caesars has kept quiet on the matter.
It's anticipated that the new venue will be a Las Vegas outpost of Friends in Low Places Bar & Honky Tonk, which Brooks and his wife, Trisha Yearwood, debuted in Nashville in March.
With the recent success of Blake Shelton's Ole Red in front of Caesars' Horseshoe Las Vegas, it's no surprise that this celebrity culinary endorsement deal with Caesars was fast-tracked.
It's unclear why Margaritaville closed, but it's not due to Buffett's death in September last year, even though the timing is unfortunate.
ShangHai Taste, the well-loved Chinatown spot known for their xialongbao dumplings, will launch their second Las Vegas location on Saturday. Located at 8060 S. Rainbow Blvd, Suite 130, this new restaurant has twice the dining space (2,400 square feet) of their Chinatown location.
