Luxury dining establishment, Carbone Riviera, will serve as Major Food Group's premier fine dining venue in Las Vegas.
The Major Food Group is set to expand its culinary empire with the opening of Carbone Riviera this Fall at the Bellagio Resort & Casino in Las Vegas. The new seafood-focused restaurant will take over the former Picasso space, offering a unique dining experience that includes a luxury Riva mini yacht service with views of the famous Fountains of Bellagio.
Carbone Riviera is a new endeavour for the Major Food Group cofounders, Mario Carbone, Rich Torrisi, and Jeff Zalaznick, in partnership with MGM Resorts International. The luxe vessel used for the experience is a part of the storied boat maker's Anniversario line, making it one of just 18 to exist.
The restaurant's interior will be transformed by designer Martin Brudnizki, with the service set to be theatrical, featuring some tableside presentations. The menu will include a variety of fresh seafood, flown in daily, such as whole Dungeness crab, sea urchin, and razor clams. Dishes on offer will include salt-braked branzino, grilled Dover sole, and spicy lobster meatballs, as well as Carbone's famed spicy rigatoni vodka.
The boat ride around the Bellagio's Lago di Como serves as an appetiser to the dinner at Carbone Riviera, allowing guests to coast around the picturesque lake before indulging in the delicious seafood offerings. The Bellagio resort offers an experience to pair with meals at Carbone Riviera, making for a truly memorable dining experience.
Carbone Riviera is intended to be a dazzling new sibling to the iconic Carbone, as well as a culmination of the decades the Major Food Group has dedicated to their craft. According to Mario Carbone, the restaurant marks a new chapter for Las Vegas' dining culture.
