James Beard Winner Kwame Onwuachi Brings Afro-Caribbean Flair to Las Vegas in 2026
Las Vegas will welcome a new steakhouse in early 2026 when Maroon opens inside the SAHARA Las Vegas. The restaurant marks the first West Coast venture for James Beard Award-winning chef Kwame Onwuachi, known for his Afro-Caribbean cuisine. His arrival brings one of the few Black-led dining spots to the Strip.
Chef Kwame Onwuachi has built a reputation for bold, authentic flavours at his East Coast restaurants, Tatiana in New York City and Dōgon in Washington, D.C. Maroon will extend this vision, focusing on Caribbean cuisine—especially Jamaican jerk—with a fresh perspective.
The opening represents a major step in Onwuachi's career, as it will be his first restaurant outside the East Coast. Maroon joins a small but growing number of Black-led restaurants on the Strip, including Emmitt's Vegas. The new steakhouse aims to stand out by blending traditional Caribbean techniques with modern fine dining. Onwuachi's approach has already earned acclaim, and Maroon is expected to bring something different to Las Vegas' competitive steakhouse scene.
