To start, heat half the corn oil in your chosen cooking vessel. Sauté steak strips for about 5 minutes until golden. Season generously with salt and pepper, then set aside. In the same pan, add the remaining oil and ground pork; brown over high heat for 10 minutes.
Next, stir in onions, garlic, Texan chili powder, jalapeños, cherry tomatoes, herbs such as bay leaf, celery leaves, and parsley, dark brown sugar, beef stock, two cans of cherry tomatoes, and two cans of mixed beans in tomato sauce. For a thicker chili, mash some of the beans into the liquid.
Cover and simmer gently for 30 minutes or longer for deeper flavor. If you prefer a milder chili, discard the jalapeños. For a more fragrant flavour rather than overly hot, adjust the chili powder and jalapeños to your taste.
