Carbone Dubai debuts with star-studded parties and bold Italian-American flavors

Carbone Dubai has officially opened its doors at Atlantis the Royal resort. The launch follows a high-energy opening weekend filled with exclusive events and surprise performances. Known for its bold Italian-American dishes, the restaurant is set to become one of the city's most in-demand dining spots.

The grand opening took place on October 6, but celebrations began earlier with a packed weekend of festivities. Guests attended an intimate dinner, followed by an afterparty at a Carbone-themed beach bar pop-up. The weekend also included a rooftop pool party at Atlantis the Royal, where Naomi Campbell made a surprise appearance as a DJ.

The restaurant's interiors were crafted by long-time collaborator Ken Fulk in partnership with Bishop Design. Inside, diners will find a striking jellyfish tank, iconic chandeliers, plush booths, and a spacious private dining area. An outdoor terrace offers views of the Skyblaze Fountain Show. Carbone Dubai's menu stays true to the brand's roots, featuring signature dishes like spicy vodka rigatoni, Caesar salad, and veal parmesan. The drinks list is equally refined, with a tight selection of classic cocktails and an extensive wine offering—450 labels in total, including some exclusive to Dubai.

The arrival of Carbone Dubai adds to the city's growing reputation as a culinary destination, especially since the launch of its own Michelin guide in 2022. While the founders insist they aren't chasing awards, the restaurant's strong reputation means securing a table will likely be a challenge. With its prime location, bold menu, and lavish design, it's poised to attract both locals and international visitors.
