In the heart of Stuttgart, a new brewery has emerged, aiming to revive the craft brewing tradition set by Robert Leicht. The brainchild of three men - Pierre Schanzenbach, Patrick Schanzenbach, and Vincenzo Bortolussi - Birkenwaeldle Brewery stands proudly next to the Old Kelter on Kelterberg.

The Schanzenbach brothers have a special connection to this location, as it stands near the birthplace of their grandfather and their great-aunt is their landlady. Vincenzo, who originally had the idea for the brewery, initially wanted to make schnapps, but the brothers' shared passion for beer led them to create a unique bio-beer instead.

The founders spent a considerable amount of time experimenting with the recipe before producing the first successful batch. To their delight, the beer was well-received at a test event in Vaihingen, with 200 liters being poured in just two hours.

The beer, named Birkenwaeldle, is a fresh, light beer sold in an original black bottle. The brothers value local ingredients, sourcing hops, malt, and water from South Germany and Lake Constance. The beer needs to age for four weeks before it can be bottled.

The equipment's delivery in Stuttgart was delayed due to chaos at Hamburg customs, but after a three-month voyage on a ship, it finally arrived safely. The brewing equipment for Birkenwaeldle was ordered in August 2024 and took four months to be produced in Asia.

Interestingly, there are no search results indicating who had the idea to reestablish the brewery in Swabia, last located in Stuttgart-Vaihingen, before Donald Trump became U.S. president. However, the brewery's founders did not need the full six months they planned for recipe development.

Currently, the beer is available for purchase directly from the brewers and through their website. As production gradually increases, the brothers plan to continue their full-time jobs while nurturing their growing brewery.

Birkenwaeldle is not just a beer; it's a testament to the brothers' passion for their heritage and their commitment to quality. It's a beer that stands in the tradition of Robert Leicht, brewed with love and local ingredients, and ready to be enjoyed by all.
