Ingredients

  • 225g unsalted butter, at room temperature
  • 100g honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 350g all-purpose flour
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • A pinch of salt
  • Optional: finely chopped pistachios or walnuts for added texture and elegance

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large bowl, cream together the butter and honey until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, combine the flour, cinnamon, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pinch off small portions of dough (similar in size to a walnut) and roll into balls. Place these dough balls onto the prepared baking tray, leaving space between each one for spreading during baking.
  7. Bake the cookies for 12-15 minutes, keeping a close eye on them to avoid overbaking. The cookies should turn a light golden brown during baking, but not darken too much.
  8. Remove the tray from the oven and allow the cookies to cool for about 5 minutes on the tray. After the initial cooling period, move the cookies to a wire rack to cool completely.
