### The barbecue season

Summertime is synonymous with the smell of grilled food in the air. Before heating up the grill, there are some important tips and techniques to consider. From choosing the right charcoal to basic equipment, there's a lot to consider!

The history of barbecuing

The discovery of fire was the beginning of our ancestors' way of life. Without gathering around a fire, we might never have discovered the joys of barbecuing.

Archaeologists have found evidence of charred meat from ancient fireplaces, suggesting that it was one of the earliest methods of cooking. Argentinian gauchos roasted whole sheep and goats over the ground, while the Chinese and French developed ancient grilling techniques using hot stones. The Romans and Greeks also used grills. The Creoles then brought spices to America, further refining the barbecuing process.

Barbecuing was popularized after the Great Depression, when George Stephan invented the kettle grill in 1951. After World War II, it became popular in Germany as well.

The essential barbecue tools

Having the right equipment is key to a successful barbecue. Along with tongs and gloves, there are other must-haves and gadgets for true barbecue enthusiasts.

Along with the necessary utensils, the type of barbecue is also critical: gas, charcoal, or a fire plate. Each has its own advantages depending on your location and preferences.

If you choose charcoal, use high-quality charcoal made from wood or coconut shells. It takes about 20-30 minutes to cool down before use. Too much charcoal can lead to overheating, while too little could result in an incomplete cook. Remove the ash carefully at the end.

When and where to barbecue

The barbecue season typically starts in the spring with delicious ingredients like asparagus and strawberries. But summer is when barbecuing really comes into its own: it's the perfect time for family gatherings and fresh summer salads. In autumn, smoked fish is on the menu, and barbecuing can even be enjoyable in winter with mulled wine, hot chocolate, or hearty dishes.

While barbecuing on your balcony or terrace can be convenient, there are some rules to follow. Check with your landlord if they allow balcony barbecues or use an electric grill to comply with regulations.

If you're considering an open fire in your backyard, check with your local authorities or municipal administration for permits. It's illegal to have open fires in nature reserves, national parks, or public spaces, as well as in forests at any time of the year.
